Sticky Buns – A healthier take!

We recently posted a picture of some Sticky Buns we made to our Facebook page by Ina Garten and they sure are yummy! But we thought we could take this recipe and maybe add a little healthier twist to it and sneak in some extra fruit! This has been mommy tested and cub approved!

Use a muffin tin
2 tbsp room Coconut oil, temp/melted (you just don’t want chunks of it)
1/4 cup honey
1/4 cup Walnuts
1 package of frozen puff pastry dough, defrosted

Filling:

1/4 cup Banana & Pear puree (click here for recipe)
1 tsp Cinnamon
1 tbsp Honey
1/2 Dried Chopped dates
2 tbsp Coconut oil, melted

Preheat oven to 400F degrees
Mix Coconut oil with honey and pour a tbsp into each muffin tin. Evenly distribute walnuts into tins next. Lightly flour surface and roll out one of the pastry doughs. Brush both sides with melted coconut oil. Leave a 1 in boarder all around and spread the banana & pear puree you’ll need about 4 spoons worth you don’t want it too soggy but enough to have a nice layer, sprinkle cinnamon to taste and dates. Starting with end closets to you roll the dough snugly like a jelly roll. Trim the sides about 1/2 in on each end and discard. Slice the roll in 6 equal pieces. Place each piece in a muffin cup. Repeat with second pastry sheet. Bake for 30 min or until golden brown. Remove and transfer to parchment paper and cool for 5 min before eating.
